Ingredients: 2 halloumi cheese slices. 2 whole wheat tortillas. 1/2 cup hummus. 1 cup mixed salad greens lettuce, spinach, arugula. 1/2 cucumber, thinly sliced. 1/2 red bell pepper, thinly sliced. 1 small red onion, thinly sliced. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste. Optional: hot sauce or sriracha for added spice.
Instructions: Preheat a grill or grill pan over medium-high heat. Brush the halloumi cheese slices with olive oil and place them on the grill. Cook for 2-3 minutes on each side or until grill marks appear and the cheese is slightly softened. In a small bowl, whisk together the remaining olive oil, balsamic vinegar, salt, and pepper to create a dressing for the salad greens. Lay out the whole wheat tortillas and spread a generous layer of hummus on each one. Place the grilled halloumi slices on top of the hummus.
