We know that because we're out here in the Kootenays and everyone's always game to taste and support our regional fare. ⠀ _____⠀ If you don't already know, Skimmerhorn is a small, family-operated winery located in Creston. The environment is perfectly suited to the production of the cool-climate wines in which Skimmerhorn specializes.⠀ _____⠀ This week's Wine Pairing Wednesday has the @skimmerhorn_winery Devil's Chair being paired with our 6-Hour Smoked Pork Belly. Pork Belly is a boneless cut of meat cut from the underside of a pig. It has juicy fat layers wrapped around the meat. There isn't much meat, but once cooked it becomes tender, similar in texture to a pork loin. And that fat is melt-in-your-mouth. We smoke our pork belly sandwiches for 6 hours (as the name alludes) and it's just the slow-cooking time that makes it the absolute perfect pairing with the Devil's Chair wine.⠀ _____⠀ This deep ruby red coloured wine is a blend of Pinot Noir and Marechal Foch varietals and has aromas of plum and cherry along with spicy vanilla notes. It has a broad, velvety mouth feel with flavours of ripe stonefruit, plum, mocha, and juniper with a berry finish.
