We all knew that Gus's motivation for basically everything he does wrt the cartel is revenge for Max, but this episode really drove home that in a way, Gustavo Fring is a man whose heart lives entirely in the past.
Is it a surprise, given how traumatic witnessing the murder of a loved one is? No, not really, but to paraphrase what Jimmy told Kim about "how one day they'll notice they haven't thought about [insert traumatic event] at all" and that will mean they have begun moving on.
This episode all but confirmed that for Gus, there's hardly a day where he doesn't think about that day by the pool in 1989, with Bolsa pressing him to the ground, Hector stepping on his neck to keep his head down and force him to look at his dead lover's face. The memory of how Max was killed haunts him to the point where he can't even allow himself to let loose for a single night when he triumphed over his enemies.
There was nothing really standing in Gus's way to arrange a date with David - except the ghost of Max. The notes of the wine are too reminiscent of blood dripping into water, and Gus is loyal to Max to the point that he cannot potentially allow himself to open up to someone else and become romantically entangled because 'moving on' would be equivalent to forgetting Max and that is worse as if Gus himself had killed him.

God the end of an era. I’ve loved this show from the start to the end, and I would recommend it to anybody who loved Breaking Bad, or who just loves great TV
