I don’t believe these to be the actual numbers for the school. But since Hogwarts has around 1,000 - 3,000 students and Beauxbatons has many more, I’m making assumptions.
For the following post we are assuming:
There are six countries that send wizarding children to Beauxbatons: The Netherlands, Luxembourg, Belgium, France, Portugal, and Spain.
Each country sends an equal amount of students. Around 1,050. That means there are 6,300 students at Beauxbatons at all times.
Classes consist of 30 students. They are an equal amount of boys and girls in each class.
Each sleeping dorm houses 10 students.
There are 7 years of education at Beauxbatons.
There are no houses at Beauxbatons like at Hogwarts or Ilvermorny. Students are sorted based on country of origin and age.
That means:
6,300/30= 210 classes in total.
210/7= 30 classes per year.
30/2 (Boys and girls) = 15 students of each sex per year per class
30 classes * 15 boys = 450 boys per year
450/10 = 45 sleeping boy dorms per year
45*7= 315 boy dorms in total
30 classes * 15 girls = 450 girls per year
450/10 = 45 sleeping girl dorms per year
45*7= 315 girl dorms in total
315*2 = 630 dorms in total
