Local Beer Battered Halibut
These Beer Battered Fish Tacos with Tomatillo and Lime Salsa are a delightful fusion of flavors and textures. Crispy beer-battered fish contrasts beautifully with the tangy tomatillo and lime salsa, all wrapped in warm tortillas. It's a perfect dish for a casual gathering or a weeknight dinner!
Ingredients: 1 lb firm white fish fillets, such as cod or halibut, cut into strips. 1 cup all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon salt. 1 cup beer preferably a light lager. Vegetable oil for frying. 8 small flour or corn tortillas. 2 cups shredded cabbage or lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 2 tomatillos, husked and diced. 2 tablespoons fresh lime juice. 1 jalapeo pepper, seeded and finely chopped. Salt and pepper to taste.
Instructions: In a large bowl, whisk together flour, baking powder, and salt. Slowly pour in the beer, whisking until smooth. Heat vegetable oil in a deep skillet or fryer to 375F 190C. Dip fish strips into the batter, shaking off excess, and carefully place them in the hot oil. Fry the fish until golden brown and cooked through, about 4-5 minutes. Remove and drain on paper towels. In a separate bowl, combine diced tomatillos, lime juice, diced tomatoes, chopped cilantro, diced red onion, and chopped jalapeo. Season with salt and pepper to taste. Warm tortillas in a dry skillet or microwave until soft and pliable. To assemble tacos, place a portion of shredded cabbage or lettuce on each tortilla, top with beer-battered fish strips, and spoon tomatillo and lime salsa over the fish. Serve immediately, with lime wedges on the side.
