Beer Before Water

I’ve never been a cook.
In fact, I overcook noodles, under cook potatoes, and think a tortilla with cheese zapped in the microwave qualifies as a quesadilla.
That might be what led my co-workers to give me sideways looks when I announced, “I’ll be making cupcakes for Marsha’s, one of our purchasers, birthday tomorrow!”
Admittedly, when I accepted my cooking duty, I imagined myself driving to the grocery store and picking up some premade sugary goodness. Unfortunately, my pride got the best of me after jokes about how poisonous my baked goods would be came rolling in, and I was determined to make something stellar.
Now, what should I make?
After updating our beer finder, writing copy for our winter beer brochure and updating our Facebook page with the latest picture of beer I found, it came to me.
I’ll make beer cupcakes.
So, I did. I cheated, slightly, and used cake mix, but they came out GREAT! I would highly suggest stealing this idea, especially for 21st birthday celebrations or any other occasion where you want to eat the best darn cupcakes possible.
The recipe is simple:
1 cake batter
4 eggs
1/4 cup vegetable oil
1 packet of instant pudding
1 cup beer
(For Blue Moon cupcakes: add orange juice to the batter.)
