Ingredients: 1 cup stout beer. 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 1/2 cup unsweetened cocoa powder. 1/4 teaspoon salt. 4 large egg yolks. 6 ounces dark chocolate, finely chopped.
Instructions: In a saucepan over medium heat, bring stout beer to a simmer. Allow it to reduce to about 1/4 cup, approximately 10-15 minutes. Set aside to cool. In a separate saucepan, combine heavy cream, whole milk, sugar, cocoa powder, and salt. Heat over medium-low heat until the mixture begins to steam, stirring occasionally. In a bowl, whisk egg yolks until smooth. Gradually whisk in about 1 cup of the hot cream mixture to temper the eggs. Then pour the egg mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil. Remove from heat and stir in the chopped dark chocolate until melted and smooth. Strain the mixture through a fine-mesh sieve into a clean bowl. Stir in the cooled stout reduction. Cover and refrigerate until completely chilled, at least 4 hours or overnight. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer the ice cream to a freezer-safe container, cover, and freeze until firm, about 4 hours or overnight. Serve scoops of chocolate stout ice cream and enjoy!
