SMOKY BEAN AND BEET BURGER
I’m back again with another beet based burger. Perhaps this is overkill but… I don’t care. I LOVE BEETS!!! I love their flavor and their nutritional benefits. They are truly amazing!
If you find that you don’t like beets I implore you to try them many different ways. My boyfriend didn’t like them but I changed his mind with a delicious roasted beets. Beet and almost all root vegetables taste best when they are roasted. This cooking process brings out their natural sweetness. You can also try them pickled. I have made them pickled with coriander seeds and they are delicious. I dare you now to dislike beets roasted with an acid like sherry vinegar, balsamic, lemon juice, orange juice and goat, blue, Gorgonzola cheese.
Beets are rich in vitamins, A, B1, B2, B6, C, calcium, fiber, folate and potassium. Beets have also been shown to relax and widen blood vessels which leads to better blood flow and circulation.They are known as natures Viagra and a natural aphrodisiac. In Ancient Rome the beet greens adorned the walls of brothels. Red beets contain betalains which is a phytonutrient that is correlated with anti-cancer fighting properties
Beets also contain naturally occurring nitrates that aid in increased blood flow to muscles and reduce the oxygen used by your muscles during exercise.

Beets have a very earthy quality and the key is to balance sweetness with acid and/or sweetness. Creaminess and things with a strong flavor like mustard or blue cheese also help balance and counter the earthiness.
SMOKY BEET CARROT & BEAN BURGERS
1 garlic clove, minced fine and set aside for 10 minutes***
1 teaspoon liquid smoke. *I used hickory flavor add a little at a time to adjust smoke taste. I found the more smoke the better but a little goes a long way with this product.
2 teaspoons Coconut Aminos (soy and gluten free), shoyu or tamari or Braggs Liquid Aminos
2 Flax “Eggs” (1 tablespoon of ground flax seed to 3 tablespoons of water = 1 Egg. Mix and let sit for about 15 mins) * Freshly ground seeds are better but for this recipe pre-ground flax seeds work well.
½ teaspoon chia seeds add to the flax egg. (Optional) I like
2 pinches of black pepper
1/8 teaspoon salt * you may need more salt
1 teaspoon red wine vinegar
1/8 teaspoon of cayenne pepper
1/4 teaspoon chipotle powder
1/8 teaspoon Chili Powder
Lime zest(finely zested) of 1 lime
In a food processor pulse (or blend in blender low speed)
Pulse/blend into a medium coarse powder
Then add ½ of the beans (combine beans and process ½ of the mix.)
Chop scallions and add to food processor.
Put ½ of the carrot beet mixture in the food processor and flax eggs until you get a creamy paste. Mix the paste with the unblended beet and carrots. Proceed to add the rest of the ingredients (Vinegar, zest, and mix well.
*Taste the mixture and adjust spices to your taste.
Form into balls or use a spoon to scoop onto a grill pan or a skillet. Once on the pan you can flatten the center with the back of a spoon. The burger patties should be about 2 inches in diameter. Smaller burgers cook better.
I used a skillet and a camping cooker because we have a gas leak in my apartment that has yet to be fixed. I had a a friend over and she asked if it would be challenging cooking on a camping stove. I told her of course not I explained that, cooking a veggie burger is not like cooking a traditional burger. Cooking the burger on medium or medium/low heat for a longer period of time is ideal! If the heat is too high the burger will burn on the outside and be too mushy inside…. So, Low and Slow is the way to go!
I put two small patties in one sandwich to bulk it up and build height.
This recipe is a lot like my other recipe. The beauty is you can use the veggies as a base and change the other flavor components. You can add corn to the mix, you can use finely minced shallots instead if scallions.
Top with Tomatoes, avocados and cilantro
I made a yogurt based sauce
2 stalks of scallion chopped
½ cup of yogurt (plain, organic)
If you are taking a vegetarian route Feta cheese is really nice on this burger as well.
