O.G. Patties: Flavorful Finger Food
I make these patties for my client and her son. Mostly her son. He loves them, I love them and I think everyone that tried them loved them to. So i want to share them with you! They are a great finger food for kids and adults.
I have to admit that I don’t often think about food for kids because I don’t have kids and because I think kids need to be trained and taught how to eat. Kids eat what their parents eat. For very young children the food just needs to be adjusted for salt, spiciness and texture that is easy to swallow other than that there is no such thing “food for children”. I kind of love the fact that my client just set the example of eating mostly a plant based diet for the health of her son and now that he is old enough to eat solid food she sets the example for him to eat plants and he loves it ! it’s really exciting to see a child ask and beg for more spinach. I do, however, understand that not every story and person is the same.... So here is a Veggie patty recipe that is filling, delicious and kid and mom approved. I think this patty is universally yummy and will please almost anyone!
2 Carrots
2 Potatoes
1 - 5oz bag of spinach
1/2 onion 1 red bell pepper
½ cup of quiona
¼ cup of Oats
1 tablespoon of chia seeds (optional)
2 Flax Eggs( 1 tablespoon ground flax seeds 3 tablespoons of water for each flax egg. Add 2 more table spoons of water if you include chia seeds)
Preheat oven to 400 degrees
Start by peeling the potatoes and cutting them into 1.5 inch – 2inch squares. Put the potato squares into a pot of boiling water and cook covered. Cook the potatoes until they are soft and easy to break.
Cook Quinoa according to package instructions.
Then soak flax and chia seeds in the water to make a Flax Egg. It should tale about 20 mins for the water soluble part of the flax to absorb the water and have an egg like texture.
While the flax/chia is soaking, chop onions and bell peppers small dice (https://www.youtube.com/watch?v=dCGS067s0zo) ,
Heat olive oil or grapeseed oil in a pan on medium high heat. Once pan is hot add onions and peppers let them cook until onions are mostly translucent then stir in spinach and cook until onions are translucent and spinach is wilted. Salt and pepper this mixture to taste.
Grate carrots
Put the bell pepper onion spinach mixture in a bowl oats, grated carrots, quinoa, potatoes, flax egg and the rest of the ingredients and mix well with hands or in a food processor.
Salt and pepper this mixture to taste.
Get a baking sheet or make one with several layers of foil paper spray with a non-stick cooking spray
Form mixture into sticks( think fish fingers or chicken tender shape) or 2-3 inch wide patties( like mini burgers/sliders). Place patties on sprayed baking sheet and cook for 20 minutes until the patty forms and hold together. Depending on your oven you may need more time. Flip them half way though cooking to ensure both sides get a nice crust and that the patties hold there shape.
