A hearty and tasty sandwich with toasted hoagie rolls, caramelized onions, bell peppers, gooey provolone cheese, and thin slices of tender chicken breast. The whole thing is flavored with savory pesto sauce.
Ingredients: 2 boneless, skinless chicken breasts. Salt and black pepper to taste. 2 tablespoons olive oil. 1/2 cup pesto sauce. 1 onion, thinly sliced. 1 green bell pepper, thinly sliced. 4 slices provolone cheese. 4 hoagie rolls, split. 2 tablespoons butter, softened.
Instructions: Season chicken breasts with salt and black pepper. In a skillet, heat olive oil over medium heat. Add chicken breasts and cook until browned and cooked through, about 6-7 minutes per side. Remove from skillet and let rest for a few minutes before slicing thinly. In the same skillet, add sliced onion and bell pepper. Cook until softened and slightly caramelized, about 5-6 minutes. Preheat the broiler in your oven. Spread pesto sauce on the bottom half of each hoagie roll. Top with sliced chicken, sauted onion, and bell pepper. Place a slice of provolone cheese on top of each sandwich. Spread softened butter on the top half of each hoagie roll. Place assembled sandwiches under the broiler until the cheese is melted and bubbly, and the top of the rolls is toasted, about 2-3 minutes. Remove from the oven, top with the other half of the roll, and serve hot.
