Ingredients: 2 cups mixed berries strawberries, raspberries, blueberries. 1/4 cup granulated sugar. 1 tablespoon lemon juice. 1/2 cup champagne. 2 cups heavy cream. 1 can sweetened condensed milk. 1 teaspoon vanilla extract. 1 1/2 cups crushed graham crackers. 1/4 cup melted butter. Fresh berries and mint leaves for garnish.
Instructions: In a saucepan, combine mixed berries, granulated sugar, lemon juice, and champagne. Cook over medium heat until berries break down and mixture thickens slightly, about 10 minutes. Remove from heat and let cool completely. In a large bowl, whip heavy cream until stiff peaks form. Gently fold in sweetened condensed milk and vanilla extract until well combined. Fold in cooled berry mixture until evenly distributed. In a separate bowl, mix crushed graham crackers with melted butter until well combined. Press graham cracker mixture into the bottom of a lined springform pan. Pour ice cream mixture over the graham cracker crust and spread evenly. Cover and freeze for at least 6 hours or overnight until firm. Before serving, garnish with fresh berries and mint leaves. Slice and enjoy!
