Ingredients: For the chicken carnitas:. 1 lb chicken breasts, boneless and skinless. 1 tbsp olive oil. 1 tsp chili powder. 1 tsp ground cumin. 1/2 tsp smoked paprika. 1/2 tsp garlic powder. Salt and pepper, to taste. For the cilantro lime cauliflower rice:. 1 head cauliflower, riced. 2 tbsp olive oil. 2 cloves garlic, minced. 1/4 cup fresh cilantro, chopped. Juice of 1 lime. Salt and pepper, to taste. For the burrito bowl toppings:. 1 avocado, sliced. 1/2 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 1/4 cup shredded cheese. 1/4 cup sour cream. Fresh cilantro, for garnish. Lime wedges, for serving.
Instructions: Preheat the oven to 375F 190C. In a small bowl, mix together the chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Rub the spice mixture all over the chicken breasts. Heat olive oil in a large oven-proof skillet over medium-high heat. Add the chicken breasts and cook for 2-3 minutes on each side until browned. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and no longer pink in the center. Remove from the oven and let rest for 5 minutes before slicing into strips. While the chicken is cooking, prepare the cilantro lime cauliflower rice. Heat olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Add the riced cauliflower to the skillet and cook for 5-7 minutes, stirring occasionally, until tender. Remove the skillet from the heat and stir in the chopped cilantro, lime juice, salt, and pepper. To assemble the burrito bowls, divide the cilantro lime cauliflower rice among serving bowls. Top with sliced chicken carnitas, avocado slices, cherry tomatoes, red onion, shredded cheese, and sour cream. Garnish with fresh cilantro and serve with lime wedges on the side.
