With a honey and red wine vinegar dressing, this salad is delicious and refreshing. The bitterness of the Trevisano lettuce goes well with the sweetness of the blood oranges and the sharpness of the Pecorino cheese.
Ingredients: 2 Trevisano heads, washed and torn into bite-sized pieces. 2 blood oranges, peeled and sliced. 1/2 cup toasted hazelnuts, roughly chopped. 1/2 cup Pecorino cheese, shaved. 2 tablespoons honey. 3 tablespoons extra-virgin olive oil. 2 tablespoons red wine vinegar. Salt and pepper to taste.
Instructions: Put the blood orange slices and torn Trevisano leaves in a large salad bowl. Put the honey, red wine vinegar, olive oil, salt, and pepper in a small bowl and mix them together with a whisk. Pour the dressing over the salad, then toss it gently to coat everything. The salad should have the toasted hazelnuts and Pecorino cheese on top of it. Serve right away and enjoy!
