Savor a delightful treat that combines the flavorful burst of mixed berries with the creamy richness of coconut butter and oil. This easy and tasty Paleo dessert option is AIP-friendly fudge, sweetened with raw honey and made without baking.
Ingredients: 1 cup coconut butter. 1/2 cup coconut oil. 1/4 cup raw honey. 1/2 cup mixed berries blueberries, raspberries, strawberries, fresh or frozen. 1 teaspoon vanilla extract optional.
Instructions: In a saucepan, melt the coconut butter and coconut oil over low heat. Once melted, remove from heat and stir in the raw honey until well combined. If using, add the vanilla extract and stir again. Line a small baking dish or tray with parchment paper. Pour half of the melted mixture into the prepared dish, spreading it out evenly with a spatula. Sprinkle half of the mixed berries over the mixture in the dish. Pour the remaining melted mixture over the berries, spreading it out evenly. Top with the remaining mixed berries, pressing them gently into the mixture. Place the dish in the freezer and chill for at least 2 hours, or until the fudge is firm. Once firm, remove from the freezer and cut into squares. Serve immediately or store in an airtight container in the refrigerator for up to a week.
