Ingredientes [serve 6-8]
3 beterrabas médias / 750 g, descascadas e cortadas em pequenos cubos
2 batatas vermelhas médias / 300 g descascadas e cortadas em pequenos cubos
1 cenoura média, descascada e picada
2 talos de aipo picados
4 xícaras de água / 1 litro
sal marinho e pimenta preta moída
50 g de manteiga
1 cebola grande / 250 g picada
1 pimentão verde, limpo e picado
3 dentes de alho picados
500 ml / 2 xícaras de sumo de tomate
200 g de repolho, finamente picado
400 g de feijão vermelho cozido
1 colher de sopa de vinagre de vinho tinto
1 colher de sopa de açúcar mascavado
Creme fraiche ou sour cream para servir
Coloque a beterraba, batatas, cenoura e aipo numa panela grande com a água e adicione o sal e a pimenta. Ferva em lume baixo até os vegetais ficarem macios.
Entretanto numa frigideira em lume médio aqueça a manteiga. Quando estiver derretida, adicione a cebola e o pimento verde e salteie até a cebola ficar translúcida. Adicione o alho e cozinhe cerca de 1-2 minutos.
Junte este refogado à panela de sopa com o sumo de tomate e volte a ferver. Adicione o repolho e feijão vermelho e cozinhe até que o repolho esteja cozinhado, cerca de 5-10 minutos.
Junte o vinagre e o açúcar.
Prove e rectifique o tempero, se necessário. Sirva em tigelas quentes e junte sour cream.

serves 6-8
3 medium beetroot/750 g, peeling and cut into small dice
2 medium red skinned potatoes/300 g peeled and cut into small dice
1 medium carrot, peeled and chopped
2 celery stalks, chopped
4 cups water/ 1 litre
sea salt and freshly ground black pepper
50 g butter
1 large onion/250 g chopped
1 green bell pepper, cored and chopped
3 garlic cloves, chopped
500 ml /2 cups tomato juice
200 g shredded Savoy cabbage
400 g can red kidney beans drained and rinsed
1 tbsp red wine vinegar
1 tbsp soft brown sugar
sour cream or creme fraiche to serve
Place the beetroot, potatoes, carrot and celery in a large saucepan with the water and add plenty of salt and pepper.
Bring to the boil then reduce to a simmer and cook until the vegetables are tender.
Meanwhile, eat a frying pan over a medium heat and add the butter. When the butter has melted, add the onion and green pepper and cook until soft.
Add the garlic and cook until fragrant about 1-2 minutes.
Add to the soup pan with the tomato juice and return to a simmer. Add the cabbage and red kidney beans and cook until the cabbage is barely tender, about 5-10 minutes
Add the vinegar and sugar. Taste and adjust seasoning if necessary.Serve each bowl hot, with a generous dollop of sour cream .
