TACOS WITH SALSA AND CREAM
This recipe is a lot of fun, with many flavours and textures, while being a very balancing and detoxifying meal at the same time. Walnuts are well known for their omega 3s, but they are also rich in antioxidants, protein, vitamin E and minerals. Packed with so much goodness, it’s important that we digest as much of them as possible and soaking them for a short while before eating makes that achievable. Mushrooms help boost the immune system, have antibiotic properties, anti-tumour actions and are easy on digestion. Tomatoes and red peppers are especially good for the heart. They detoxify the body, purify the blood and are useful in cases of constipation.
For the meat
1 cup walnuts, soaked 1–4 hours 1⁄2 cup sundried tomatoes, soaked 1-4 hours 4 medium chestnut mushrooms, chopped and soaking with sundried tomatoes in same water for same time, 1–4 hours 1 tbsp tamari or Braggs amino acids 1 tbsp mixed seasoning (coriander/cumin/ garlic/paprika, etc)
For the salsa
2 large tomatoes, finely chopped 1⁄2 cup pineapple, finely chopped 1⁄2 red bell pepper, finely chopped 1⁄4 cup coriander/ cilantro, chopped 1 lemon, juiced 2 garlic cloves, minced For the cream 1⁄2 cup cashew cream 1 small avocado 2 tbsp apple cider vinegar
For the tacos
1⁄2 the leaves from a head of iceberg lettuce
Directions
In the food processor, blitz the ‘meat’ ingredients until desired consistency (Tip: look for similar sized chunks and stop before the ingredients turn into a paste). Mix all the Salsa ingredients in a bowl. Blend the Cream ingredients in a blender until smooth. Peel the iceberg lettuce and fill each leaf with filling, topped with salsa and cream. Wrap the lettuce up like a burrito or eat it open like a taco.
