BHETKI GRILLED/FRIED . . People who are close to me knows my love for fish and they are quite happy to offer me fresh fishes from the market, whenever they find some. . . Bhetki for a Bengali is no less than gold specially in Hyderabad. When a friend of mine got me a fillet of around 500 gms (costed me ₹800) I had fish fry in my mind. However, since I did not want to go for anything coated & fried, I opted to grill. The best grill fish I had was off course by Chef Anand at @hyatthyderabad_gachibowli long time back on a Sunday afternoon. . . After marinating close to 24 hours, I fired up the grill and with little butter on the sides, grilled up the bhetki fillet for 5 minutes a side. They came out golden brown and well cooked inside. . .
