Shredded...that’s the fastest way to prep and cook rutabagas or turnips which both take longer than potatoes to cook as a recipe ingredient. Rutabagas are low in carbohydrates, have a high glycemic index but a low glycemic load (higher fiber, slow digesting). Try substituting rutabagas or turnips for potatoes to see how they help your blood sugar readings stay in the good range while allowing you to eat your favorite recipes again.
