I could picture Ed as bisexual in a very casual doesn't particularly care kind of way, if that makes sense? Like he's not overly concerned with the gender(s) of his romantic or sexual partners, as long as everyone is having a good time. And I think if you were to travel into the world of OFMD and give Ed a comprehensive dictionary of queer terminology, he probably wouldn't label himself as "bisexual" in the same way I don't think canon Ed would label himself "genderqueer" or anything like that even if he had all the words right in front of him. That's just not how the show discusses and engages with sexuality and I don't think anyone aboard The Revenge would give a shit about labels. Like if you went up to Stede and asked if he considered himself a gay man he'd probably say "yes" if he understood that typically refers to a man attracted to other men, but also don't think he'd directly adopt that social identity for himself despite fitting all the criteria.
