In this One Pan Spicy Lime Chicken recipe, sweet potatoes, guacamole, and tender chicken breasts are all cooked together in one pan. It's a simple dish with big flavors that tastes great.
Ingredients: 2 chicken breasts, boneless and skinless. 2 sweet potatoes, peeled and diced. 2 tablespoons olive oil. 2 teaspoons chili powder. 1 teaspoon paprika. 1 teaspoon garlic powder. Salt and pepper to taste. 2 limes, juiced. 2 avocados, peeled, pitted, and mashed. 1 tomato, diced. 1/4 cup red onion, diced. 2 tablespoons cilantro, chopped. 1 jalapeo, seeded and diced. Salt and pepper to taste.
Instructions: Preheat oven to 400F 200C. In a bowl, mix olive oil, chili powder, paprika, garlic powder, salt, pepper, and lime juice. Place chicken breasts and sweet potatoes on a baking sheet lined with parchment paper. Brush the spice mixture onto both sides of the chicken breasts. Drizzle the remaining spice mixture over the sweet potatoes. Bake for 25-30 minutes or until chicken is cooked through and sweet potatoes are tender. While chicken and sweet potatoes are baking, prepare the guacamole. In a bowl, combine mashed avocado, diced tomato, diced red onion, chopped cilantro, diced jalapeo, salt, and pepper. Serve the spicy lime chicken alongside the roasted sweet potatoes and guacamole.

Cook Time: 30 minutes
