Ingredients: 1 cup all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1/2 cup vegetable oil. 2 large eggs. 1/2 cup buttermilk. 1/2 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup hot water. 1/2 cup Biscoff spread smooth. 1/2 cup mini chocolate chips. 12 Biscoff cookies for garnish.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with paper liners. In a mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt. Add the vegetable oil, eggs, buttermilk, and vanilla extract to the dry ingredients. Mix until the batter is smooth and well combined. Stir in the hot water until the batter is thin, and then fold in the Biscoff spread and mini chocolate chips. Fill each cupcake liner about 2/3 full with the batter. Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely. Once the cupcakes are completely cool, garnish each one with a Biscoff cookie.
