These Meatball Bombs are a tasty mix of meatballs topped with garlic butter and melted cheese, all wrapped in warm biscuit dough. They're great as an appetizer or as a hearty meal.
Ingredients: 1 pound ground beef. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1 egg. 2 cloves garlic, minced. Salt and pepper to taste. 4 mozzarella cheese sticks, cut into small pieces. 1 can refrigerated biscuit dough. 4 tablespoons butter, melted. 2 cloves garlic, minced for garlic butter topping. 1 tablespoon chopped fresh parsley optional, for garnish.
Instructions: Preheat the oven to 375F 190C. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and pepper. Mix well. Take a small portion of the meat mixture and flatten it in your palm. Place a piece of mozzarella cheese in the center and wrap the meat around it, shaping it into a ball. Repeat with the remaining meat and cheese. Flatten each biscuit dough piece and place a meatball in the center. Wrap the dough around the meatball, pinching to seal. Place the stuffed dough balls seam side down on a baking sheet lined with parchment paper. In a small bowl, mix melted butter with minced garlic. Brush the garlic butter over the tops of the stuffed dough balls. Bake in the preheated oven for 15-20 minutes or until the dough is golden brown and the meatballs are cooked through. Remove from the oven and sprinkle with chopped parsley if desired. Serve hot and enjoy!
