Salt and pepper to taste. 8 small corn tortillas. 1 tablespoon vegetable oil. Sour cream and salsa for garnish optional.
Instructions: In a bowl, combine the sliced flank steak with cumin powder, chili powder, salt, and pepper. Toss to coat the meat evenly. Heat vegetable oil in a skillet over medium-high heat. Add the sliced steak and cook for 2-3 minutes per side or until it reaches your desired level of doneness. Remove from the skillet and set aside. In the same skillet, add a little more oil if needed. Add the minced garlic and saut for about 30 seconds until fragrant. Add the sliced onions and minced jalapeo pepper to the skillet. Saut for 2-3 minutes until the onions become translucent. Stir in the diced tomatoes and cook for another 2-3 minutes until they start to soften. Return the cooked steak to the skillet and stir to combine all the ingredients. Cook for an additional 2 minutes to heat through. Remove the skillet from heat and drizzle lime juice over the steak mixture. Stir in fresh cilantro. Warm the corn tortillas in a dry skillet or microwave until pliable. To assemble the tacos, spoon the sauteed steak and vegetable mixture onto each tortilla. In the meantime, mix the maple syrup, white vinegar, tomato sauce, and sriracha sauce in a small saucepan. Bring to a simmer over medium-low heat. Cook for 5 to 7 minutes, stirring every now and then, until the sauce gets a little thicker. Put the potatoes on a plate and drizzle them with the spicy tomato sauce when they are done. Make sure the pork tenderloins are well covered with the seasoning mix by rubbing them with it. Season the pork tenderloins and put them in a roasting pan or a skillet that can go in the oven. Add the apple slices to a different bowl and mix them with the melted butter and maple syrup. Put the apple slices around the pork tenderloins in the roasting pan. After the oven is hot, roast the pork for 25 to 30 minutes, or until the internal temperature reaches 145F 63C. Take it out of the oven and let it cool down for a few minutes before cutting it.
