Ingredients: 1 cup unsalted butter, softened. 1/2 cup powdered sugar. 1 tsp mint extract. 2 cups all-purpose flour. 1/2 cup mini chocolate chips. 1/4 cup finely chopped dark chocolate or chocolate shavings. 1/4 tsp salt.
Instructions: In a bowl, cream together butter and powdered sugar until smooth. Add mint extract and mix until combined. Gradually add flour and salt, mixing until a dough forms. Fold in mini chocolate chips and finely chopped dark chocolate. Form the dough into a log shape, about 2 inches in diameter. Wrap the dough log in plastic wrap and refrigerate for at least 1-2 hours. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Slice the chilled dough into rounds, about 1/4-inch thick. Place the cookies on the prepared baking sheet and bake for 12-15 minutes, or until the edges are lightly golden.
