For Halloween, I made a black magic cake. It's a chocolate cake with a coffee flavour, has a 'false' dark chocolate mousse filling (a whipped dark chocolate ganache) and a dark chocolate ganache encasing the entire cake.
Story
My mom always made this for every occasion. It’s dark, rich, chocolatey flavor complemented by its thick, creamy, milk chocolate frosting always had everyone asking for the recipe. I can remember her always making cakes from scratch and ‘helping’ her ‘clean’ the beaters.
Ingredients
1 ¾ cups flour
2 cups sugar
¾ cup cocoa
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs – room temperature
1 cup strong black coffee (or 2 tsp instant coffee + 1 cup water)
1 cup buttermilk
½ cup vegetable oil
Method
Preheat oven to 350 degrees
Combine dry ingredients in large mixer bowl
Add all wet ingredients
Beat at medium speed for 2 minutes
Pour into greased and floured 9x13 pan (Batter will be thin)
Bake at 350 degrees for 35-40 minutes. Cake is done when inserted toothpick comes out clean.
Frosting
1 large package instant chocolate pudding mix
2 cups milk
½ pint whipping cream
Whip together and spread on cooled cake. Keep cake refrigerated.
