Ingredients: 2 cups blackberries, fresh or frozen. 1/2 cup Greek yogurt. 1/2 cup honey or maple syrup. Zest of 1 lemon. Juice of 1 lemon. 1 teaspoon vanilla extract.
Instructions: In a blender, combine the blackberries, Greek yogurt, honey or maple syrup, lemon zest, lemon juice, and vanilla extract. Blend until the mixture is smooth and well combined. Taste the mixture and adjust the sweetness if needed by adding more honey or maple syrup. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a frozen yogurt consistency. If you don't have an ice cream maker, pour the mixture into a shallow dish and freeze it. Every 30 minutes, take it out and stir with a fork to break up any ice crystals until it's firm but scoopable. Once the frozen yogurt is ready, transfer it to an airtight container and freeze for an additional 2 hours to firm up. Serve the blackberry lemon frozen yogurt in bowls or cones.
