Louisianans make a tasty and spicy dish called Cajun Blackened Catfish. The catfish fillets are seasoned with a homemade blackening mix and then cooked to perfection in a hot skillet. This dish is full of strong Cajun flavors and goes well with rice, vegetables, or a fresh salad.
Ingredients: 4 catfish fillets. 2 tablespoons paprika. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 tablespoon dried oregano. 1 tablespoon dried thyme. 1 tablespoon cayenne pepper. 1 tablespoon black pepper. 1 tablespoon white pepper. 1 teaspoon salt. 4 tablespoons unsalted butter, melted.
Instructions: Set a cast-iron skillet on high heat to warm it up. To make the seasoning, put paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, white pepper, and salt in a small bowl and mix them together. Cover both sides of each catfish fillet with a lot of the seasoning for blackening. Melt the butter and add it to the hot pan. Carefully add the catfish fillets that have been seasoned to the pan. To make the fish black and cooked all the way through, cook each fillet for three to four minutes on each side. Serve hot with fresh lemon wedges on top.
