Ingredients: 4 bone-in pork chops. 2 tablespoons paprika. 1 tablespoon onion powder. 1 tablespoon garlic powder. 1 tablespoon thyme, dried. 1 tablespoon oregano, dried. 1 tablespoon cayenne pepper. 1 tablespoon black pepper, ground. 1 tablespoon kosher salt. 1/2 cup brown sugar. Traeger Pork and Poultry Rub optional. Applewood or hickory wood pellets.
Instructions: Set the temperature on your Traeger smoker to 225F. To make the blackening seasoning, combine paprika, onion powder, garlic powder, thyme, oregano, cayenne pepper, black pepper, kosher salt, and brown sugar in a bowl. Lightly coat the pork chops with the blackening seasoning mixture after rubbing them with Traeger Pork and Poultry Rub optional. The seasoned pork chops should be placed on the heated smoker grates. The pork chops should be smoked for two to three hours, or until the internal temperature reaches 145F. Optional: For a crispy finish, raise the temperature to 400F for the final ten minutes. Before serving, take the smoked pork chops out of the smoker and give them a few minutes to rest.
