I often fancy mixing myself a Paloma, but often miss at least one of the ingredients. But today, I had ripe grapefruits, tequila (I’m more of a gin, rum and whisky girl!), my eau de seltz siphon chilling in the fridge, a recipe to follow in this month’s issue of The Simple Things, and 33°C in the garden, with heaps of sunshine and an expense of cloudless blue skies. Thus, I mixed a Paloma, and very much enjoyed sipping the refreshing cocktail, lounging in the deck chair! It was worth the wait! Happy Friday!
Ingredients (serves 1):
1/2 lime
salt (optional)
10 ice cubes
1/2 ripe, juicy pink grapefruit
15 millilitres/1/2 fluid ounce (1 tablespoon) agave syrup
60 millilitres/2 fluid ounces (4 tablespoon) Blanco tequila
lime and grapefruit slices and a mallow flower, for garnish (optional)
If you wish to frost the rim of your glass with salt, rub the lime halve all around the edge of a highball glass. Then, dip the rim in salt. Set aside.
Fill a cocktail shaker with 6 of the ice cubes.
Thoroughly squeeze the juice of the lime and the grapefruit halves, and pour over the ice in the shaker. Add agave syrup and tequila. Close shaker tightly, and shake energetically until chilled through.
Add remaining 4 ice cubes to prepared glass, and garnish with lemon and grapefruit slices, if desired.
Double strain grapefruit and tequila mixture into the glass. Give a gentle stir. Top with chilled sparkling water.
Top with a mallow flower if you wish, and enjoy Paloma immediately!
