For Hellenic rituals (I'm assuming you don't mean rituals of the Hellenistic period specifically - but correct me if I'm wrong!) sponde is a good online resource, and here is a list of more links you might find useful. If you'd like books, Greek Religion by Walter Burkert is very informative; I also often see others recommend Kharis by Sarah Kate Istra Winter, though I haven't read it myself.
