This colorful and refreshing dip has the sweetness of blueberries, the crunch of corn, and the heat of jalapeo. It's great for summer parties or just snacking whenever you want.
Ingredients: 1 cup fresh blueberries. 1 cup corn kernels. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1 jalapeo, seeded and minced. 1 tablespoon lime juice. Salt and pepper to taste. Tortilla chips for serving.
Instructions: Put blueberries, corn, red onion, cilantro, jalapeo, and lime juice in a bowl. Add pepper and salt to taste. Toss gently until everything is well combined. Put the dish in the fridge for at least 30 minutes with the lid on to let the flavors mix. Put it out with tortilla chips nearby to dip.
