Ingredients: 1 ear of corn, kernels removed. 1 ripe avocado, diced. 1 can 15 ounces black beans, drained and rinsed. 1/4 cup red onion, finely diced. 1/4 cup cherry tomatoes, diced. 1/4 cup cilantro, chopped. 1 jalapeno pepper, seeded and minced. Juice of 1 lime. Salt and pepper to taste.
Instructions: In a large bowl, combine the corn kernels, diced avocado, black beans, red onion, cherry tomatoes, cilantro, and jalapeno pepper. Squeeze the lime juice over the mixture and toss gently to combine. Season with salt and pepper to taste. Serve immediately or refrigerate until ready to serve.
