Blueberry Lime Cheesecake Cupcakes-Zesty Dessert Bliss

Delightful and flavorful, these vegan donuts are made with aquafaba, the liquid from a can of chickpeas, which acts as an egg replacer. They are baked, not fried, making them a healthier alternative to traditional donuts.

Ingredients: 1 cup all-purpose flour. 1/2 cup sugar. 1 1/2 tsp baking powder. 1/4 tsp baking soda. 1/2 tsp salt. 1/2 cup almond milk. 1/4 cup aquafaba. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 1 tsp lime zest. 1/2 cup blueberries, fresh or frozen.

Instructions: Warm the oven up to 350F 175C and grease a donut pan. Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl with a whisk. Add the melted coconut oil, vanilla extract, lime zest, and almond milk to a different bowl and mix them together using a whisk. Mix the wet and dry ingredients together until they are just mixed. You can now add the blueberries. Put enough batter into each donut mold to fill it about three quarters of the way to the top. Bake the donuts for 12 to 15 minutes, or until a toothpick stuck in one comes out clean. The donuts should cool in the pan for a few minutes before being moved to a wire rack to cool all the way down.
