Description:

There is no chicken in Camembert, Brillat-Savarin, or Pont-l'Évêque. Andouillette, with its compacted, entangled mess of pork and veal intestines, is just that: pork and veal. Although a case can be made for the pairing of crispy chicken skins and sweets, Teurgoule sports no such ingenuity. It is, like the gloopy, sticky vowels of its namesake, ooey-gooey and fairly smooth in consistency—a simple mixture of arborio rice, cream, and sugar. Chicken free. Hannibal can’t remember the last time they had chicken, but he’s vowed to never underestimate Will’s eccentric sense of humor. - Or, Will seems to be confusing veal with chicken, and gets Hannibal to cook him a beloved childhood recipe.
