Vegetarian Cottage pie INGREDIENTS(THING TO GATHER TOGETHER) 1 tbsp vegetable/canola oil 1 chopped red onion 80g chopped white button mushrooms 1 tbsp tomato ketchup(optional) 2 tbsp Royco Beef usavi mix/ Karinga relish mix(optional) I cup water (250ml) Any vegetables of choice l used finely grated corn flour 100g 100g peas Salt and pepper to taste 600g mashed potato METHOD(HOW IT DONE) -.Preheat oven to 180°C -.Heat the oil in a shallow pan , sauté the onion in the oil, add the mushrooms and fry until soft, -.Mix usavi mix with the water and add grated corn flour and peas in the pan, bring to the boil, then simmer covered for 3-4 minutes. -.Stir in the ketchup, pour into an oven proof dish or in little ramekins. -.Cover with mashed potato, sprinkle with cheese if you want and cook in the oven for 25-30 minutes pr until golden brown.
