Bondiola casera is a tasty pork roast that is simple to make and full of flavor. The slow roasting and flavorful rub make the pork tender and juicy, which is great for any event.
Ingredients: 1 pork bondiola pork shoulder or butt. Salt, to taste. Black pepper, to taste. Garlic powder, to taste. Smoked paprika, to taste. Oregano, to taste. Olive oil, for rubbing.
Instructions: Preheat your oven to 325F 163C. Place the pork bondiola on a cutting board and pat it dry with paper towels. In a small bowl, mix salt, black pepper, garlic powder, smoked paprika, and oregano to create a rub. Rub the spice mixture evenly over the entire surface of the pork bondiola. Place the seasoned pork bondiola in a roasting pan or oven-safe dish. Drizzle olive oil over the pork and rub it to coat the meat. Cover the roasting pan with foil and roast in the preheated oven for approximately 2.5 to 3 hours or until the pork is tender and easily pulls apart with a fork. For a crispy exterior, uncover the pork during the last 30 minutes of cooking. Once done, remove from the oven and let it rest for a few minutes before slicing.
