I personally have done something similar and I can say that my wip has benefited so much with being in just one head. (And you could always add in the povs later on that's what I'm going to eventually do since this will be a series)

I don't know how much help this would be, but I personally try to limit how many POVs I have. It can get a little confusing for the reader, but more than that, I think it's kinda fun to learn things along with the protagonist. Either way, it's your story, so your choice. You do you, hon.
Yeah, I’ll try writing and outlining the thing from just one person’s POV and see if I have enough “stuff” for two more POVs. If I don’t feel like they’re necessary, I’ll just stick to one person.
And yeah, since it’s third person, adding more POVs in the future if I need to hopefully won’t be as jarring as when books switch from first to third or suddenly add another first.
