The rich chocolaty goodness of brownies is combined with the delightful surprise of coconut-filled chocolate bars in these bounty filled brownie cookies. They're the ideal treat for any chocolate and coconut fan!
Ingredients: 1 cup 2 sticks unsalted butter. 1 cup semisweet chocolate chips. 1/2 cup cocoa powder. 2 cups granulated sugar. 4 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 1 cup chopped Bounty bars or other coconut-filled chocolate bars.
Instructions: Preheat your oven to 350F 175C. Line baking sheets with parchment paper. In a microwave-safe bowl, melt the butter and chocolate chips together, stirring until smooth. Add the cocoa powder and granulated sugar to the melted chocolate mixture. Mix well. Beat in the eggs, one at a time, and then stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until well combined. Fold in the chopped Bounty bars or coconut-filled chocolate bars. Drop spoonfuls of the cookie dough onto the prepared baking sheets, leaving space between each cookie. Bake the cookies for 10-12 minutes or until the edges are set but the centers are still slightly soft. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely. Enjoy these delicious bounty filled brownie cookies!
