There is nothing gluten-free about this Pear Bourbon Skillet Crisp. It has the sweetness of ripe pears, the warmth of bourbon, and the crunchiness of a crisp topping.
Ingredients: 4 ripe pears, peeled, cored, and sliced. 2 tablespoons bourbon. 1 tablespoon lemon juice. 1/2 cup gluten-free rolled oats. 1/4 cup almond flour. 1/4 cup chopped pecans. 1/4 cup brown sugar. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 cup melted coconut oil. Pinch of salt.
Instructions: Preheat the oven to 350F 175C. In a bowl, toss the sliced pears with bourbon and lemon juice. In another bowl, combine oats, almond flour, pecans, brown sugar, cinnamon, nutmeg, melted coconut oil, and salt to make the crisp topping. Place the pear mixture in a cast iron skillet. Sprinkle the crisp topping evenly over the pears. Bake for 30-35 minutes, or until the topping is golden brown and the pears are tender. Serve warm, optionally with a scoop of vanilla ice cream.
