Ingredients: 4 whole wheat pita bread rounds. 1 cup refried beans. 1 cup shredded Mexican cheese blend. 1/2 cup diced bell peppers assorted colors. 1/4 cup diced red onion. 1/4 cup sliced black olives. 1/4 cup chopped cilantro. 1 jalapeo, thinly sliced optional. 1 avocado, sliced optional. 1/4 cup salsa for serving. 1/4 cup sour cream for serving.
Instructions: Preheat the oven to 375F 190C. Place pita bread rounds on a baking sheet lined with parchment paper. Spread a layer of refried beans evenly on each pita bread round. Sprinkle shredded cheese over the beans. Top with diced bell peppers, red onion, black olives, and cilantro. If desired, add sliced jalapeo and avocado on top. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly. Remove from the oven and let cool slightly. Slice each pita pizza into quarters. Serve with salsa and sour cream on the side for dipping. Enjoy!
