This vegan take on a classic pecan pie has the rich flavors of bourbon, pecans, and dark chocolate. Rich chocolate, crunchy pecans, and a hint of bourbon come together to make a dessert that is hard to resist.
Ingredients: 1 9-inch vegan pie crust. 1 cup pecans, chopped. 1 cup dark chocolate chips. 3/4 cup brown sugar. 1/2 cup maple syrup. 1/4 cup bourbon. 1/4 cup cornstarch. 1/4 cup unsweetened almond milk. 2 tablespoons vegan butter. 1 teaspoon vanilla extract. 1/2 teaspoon salt.
Instructions: Start by heating the oven to 350F 175C. Put dark chocolate chips and chopped pecans in a bowl and mix them together. Cover the bottom of the pie crust with an even layer of it. Mix bourbon, cornstarch, brown sugar, maple syrup, vegan butter, vanilla extract, and salt in a saucepan. Stir the mixture all the time over medium heat for about 5 to 7 minutes, or until it gets thick. Then, pour the mix on top of the chocolate chips and pecans in the pie crust. It should be baked for 35 to 40 minutes, or until the crust is golden brown and the filling is set. Let the pie cool down all the way before you serve it. You can add more pecans and chocolate chips as a garnish if you want to. Cut it up and enjoy!
