A delicious and aromatic chicken curry made with coconut, poppy seeds, fennel seeds, and curry leaves, cooked to perfection in a pressure cooker.
Ingredients: 500g chicken, cut into pieces. 1 cup grated coconut. 2 tbsp poppy seeds. 1 tbsp fennel seeds. 10-12 curry leaves. 2 large onions, finely chopped. 3 tomatoes, pureed. 1/2 cup yogurt. 2 tbsp ginger-garlic paste. 2 tsp red chili powder. 1 tsp turmeric powder. 2 tsp garam masala. Salt to taste. 2 tbsp cooking oil. Fresh coriander leaves for garnish.
Instructions: Make a fine paste with poppy seeds, fennel seeds, curry leaves, and coconut in a grinder. Mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt together and put it on the chicken. Wait thirty minutes. Warm up the oil in the pressure cooker. Put in the chopped onions and cook until they turn golden brown. Put in the tomato puree and cook until the masala and oil separate. Put in the chicken that has been marinated, and cook for 5 minutes, stirring every now and then. Put in the garam masala and coconut paste. Add more salt and cook for two more minutes. After the first whistle, add one cup of water and close the lid. Cook for fifteen minutes. Let the pressure go away on its own.
