Where can people read more about "bread cultures" of the world and the history of bread and the agricultural info involved? i'm interested in learning more world history and science on all of this and hearing some book titles or other sources you used, something to start out with? also i tried looking up panacultus and there's almost nothing for the exact term, just "panniculitis" (health problem)? your post was intriguing and thank you for any help.
If you're a westerner (like me) then I think a good starting point is to learn what has been done—out of desperation—to our own bread culture in the last century or so. For that check out "bread matters" by Andrew Whitley (ISBN 9781449418915)
Beyond that I have had enormous difficulty finding reliable information (that is, free of colonialism) in print. The best I've been able to do is careful use of Google.
I don't have any bookmarks to share, I'm afraid, but I would point you in the direction of Indian and Japanese breads. Both cultures have very distinctive and illuminating ideas.
I'm about to begin exploring Jewish bread culture, which I expect will be fascinating and delicious. Challah and bagels, and no doubt much more!
For the agricultural side, check out the archaeological section of your local library.
As for "panecultus" well that's a pun of my devising. Pane being a Latin word relating to bread, and cultus the root from which derive the English words for cult, culture (in the anthropological sense) and culture (in the biological sense).
