These Stove Top Chili Bread Boats are a fun twist on traditional chili. The hearty chili is loaded with ground beef, beans, and vegetables, then spooned into hollowed-out French bread loaves and topped with gooey melted cheese. It's a delicious and satisfying meal that's perfect for a cozy night in.
Ingredients: 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 can 14.5 oz diced tomatoes. 1 can 15 oz kidney beans, drained and rinsed. 1 can 8 oz tomato sauce. 2 tbsp chili powder. 1 tsp cumin. Salt and pepper to taste. 4 small French bread loaves. Shredded cheddar cheese, for topping. Chopped fresh cilantro, for garnish.
Instructions: In a large skillet, cook ground beef over medium heat until browned. Add diced onion, minced garlic, and diced bell pepper to the skillet. Cook until vegetables are tender. Stir in diced tomatoes, kidney beans, tomato sauce, chili powder, cumin, salt, and pepper. Simmer for 10-15 minutes, stirring occasionally. Meanwhile, preheat the oven to 350F 175C. Cut a V-shaped wedge out of the top of each French bread loaf and hollow out the center to create 'boats.' Place the bread boats on a baking sheet and fill each with the prepared chili mixture. Top each bread boat with shredded cheddar cheese. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly. Garnish with chopped cilantro before serving.
