Sriracha + Breaded Eggplant sandwich!
I often find myself trying to master the right technique to cook eggplant. I find baking has been the best method for me so far, and this breaded baked version definitely brings out the flavors of the eggplant and adds a crispy texture! I added some sriracha for some kick and drizzled a little chao cheese on the sandwich as well! Recipe below!
Ingredients:
1 medium eggplant (cut into slices)
1 cup Whole Wheat Flour (or all purpose flour)
liquid mixture
1 tablespoon sriracha
1 cup almond milk, plain and unsweetened (Trader Joe’s again)
breadcrumb mixture:
1 cup panko breadcrumbs (I used the Trader Joe’s brand)
2 tsp nutritional yeast
1 tsp italian seasoning
1/2 tsp garlic
1/2 tsp salt
Instructions: Preheat the oven to 400F and line a baking sheet with foil. Spray the foil with olive oil spray or dab oil liberally. Slice eggplant into thin rounds at approximately 1/2 inch thick, and sprinkle each side with sea salt. You can let it sit for about 15-20 minutes and then rinse off and let a kitchen towel absorb the water. Wait until the eggplant is dry. Next, you will need three bowls for the three mixtures (explained above) that you’ll be dipping the eggplant slices into: 1) whole wheat flour 2) liquid mixture (almond milk + sriracha) 3) breadcrumb mixture (breadcrumbs, nutritional yeast, italian seasoning, garlic, salt). Arrange the ingredients in the bowls and dip the eggplant into first the flour, then the liquid mixture, and finally the breadcrumb mixture. Arrange the eggplant into the baking sheet.
Bake for approximately 10-15 minutes on each side. Just check to see the crispiness of the eggplant. You want them very crispy and golden! Also after baking them, you can pan fry them for a few minutes on each side if you want them to achieve an extra golden brown.
Finally, I added my eggplant to a sandwich with chao cheese and more sriracha dripped on top. Eggplant for the win!
