The "egg" biscuit sandwich with kale at @dulcevegan bakery in Atlanta! While the biscuits crumbled pretty easily, it was still pretty delicious! A feast was had on my recent trip to Atlanta at @soulvegetarian2 ! From left to right we have crispy tofu cutlets with tartar sauce and sweet potatoes, country baked steak, and Mac and cheese! Cut up grapes, strawberries, apples, pears, peaches, and bananas (or whichever fruits you want to use) and add some orange juice and chaat masala (a mix of salt, pepper, dried mango powder, cumin, ginger powder, nutmeg, chili powder, and ground cloves) for this delicious nutritious treat! Dragonfruit, mango, and kale smoothie!

Today I prepared a quick smoothie for some mid-day energy! I recently picked up a dragonfruit at the farmer’s market and wanted to test it out.  I didn’t realize how expensive dragonfruit is here! The total clocked in at $5.00 for one dragonfruit ($4.99 per pound).  Alas it was worth it as I mixed the fruit with a mango and kale for a delicious taste. I saved the dragonfruit skin so that I could drink out of it.  It is quite multifunctional! Anyway, follow the recipe below!

Ingredients

1/2 dragonfruit (cored, leaving the shell in tact)

1 mango

1/2 cup kale

1/2 lime (juice squeezed)

1 cup almond milk

ice

Mix all ingredients in a blender 

and Voila! It’s that easy!
