Champorado (Filipino Chocolate Rice Pudding)

1 cup glutinous rice (aka; sweet rice) 2 cups plant-based milk 2 cans (400 ml each) coconut milk 1/2 cup organic cane sugar I can (200 g) sweetened condensed coconut milk 1/4 cup cocoa powder 1 tsp pure vanilla extract 1/2 tsp sea salt

Place all of the ingredients into a large saucepan. Stir to coat evenly. Turn heat to high. As soon as mixture comes to a boil, turn heat to low and cook for 25-30 minutes, stirring frequently to prevent rice from sticking to the bottom of pan.

Serve hot or cold, for breakfast or dessert.

Makes about 6 servings.

I forgot we only had one egg left....which I so called dibs on last night. Haha

And even though I was literally cooking one egg I still toasted two pieces of bread. LOL oh well made an egg sandwhich now instead. 👌🏼
