Ingredients: 3 pounds beef brisket. 2 teaspoons sea salt. 1 teaspoon black pepper. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. 1/2 cup beef broth. 1 onion, sliced. 2 cloves garlic, minced. 1 bell pepper, sliced. 1 jalapeo pepper, sliced optional. 1 tablespoon coconut oil. Lettuce leaves or paleo tortillas for serving. Taco toppings of your choice e.g., avocado, salsa, cilantro.
Instructions: In a small bowl, mix together sea salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper to create a spice rub. Rub the spice mixture evenly over the brisket, ensuring it's well coated on all sides. Heat coconut oil in a skillet over medium-high heat. Sear the brisket on both sides until browned, about 3-4 minutes per side. Place the seared brisket in a slow cooker. Add the beef broth, sliced onion, minced garlic, bell pepper, and jalapeo pepper if using to the slow cooker. Cover and cook on low for 8-10 hours or until the brisket is tender and easily shreds with a fork. Once cooked, shred the brisket using two forks and mix it with the cooking juices and vegetables in the slow cooker.
