Ingredients: 2 cups cooked shredded chicken breast. 2 cups cooked broccoli florets. 1 cup cooked quinoa. 1/2 cup shredded cheddar cheese. 1/4 cup chopped fresh cilantro. 1/4 cup gluten-free salsa. 4 large gluten-free tortillas. Salt and pepper to taste. Olive oil for grilling.
Instructions: In a large bowl, mix together the shredded chicken, broccoli, quinoa, cheddar cheese, cilantro, and salsa. Season with salt and pepper to taste.
