A tasty and comforting pasta dish with orecchiette pasta covered in a tasty broccoli sauce.
Ingredients: 250g orecchiette pasta. 2 cups broccoli florets. 2 cloves garlic, minced. 1/4 cup olive oil. 1/4 teaspoon red pepper flakes. 1/4 cup grated Parmesan cheese. Salt and pepper to taste.
Instructions: Cook orecchiette pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining. While pasta is cooking, blanch broccoli florets in boiling water for 2 minutes, then transfer to ice water to stop the cooking process. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, saut until fragrant, about 1 minute. Add blanched broccoli florets to the skillet and saut for 3-4 minutes until tender. Add cooked orecchiette pasta to the skillet along with the reserved pasta water. Stir well to combine and let simmer for 2-3 minutes. Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese. Enjoy!
