Ingredients: 12 oz orecchiette pasta. 1 lb Italian sausage, casings removed. 2 cups broccoli florets. 3 cloves garlic, minced. 1/4 cup grated Parmesan cheese. 2 tablespoons olive oil. Salt and pepper to taste. Crushed red pepper flakes optional.
Instructions: As the water boils, add salt to a large pot. Follow the directions on the package to cook the orecchiette pasta until it is al dente. Drain the pasta and set it aside. Save 1/2 cup of the pasta water. Warm up the olive oil in a big pan over medium-low heat. To make the Italian sausage brown and fully cooked, add it and break it up with a wooden spoon as you cook it. This should take about 5 to 7 minutes. When you add the minced garlic to the pan, cook for another one to two minutes, until the garlic smells good. Put the broccoli florets in the pan and cook them for three to four minutes, until they start to get soft. Put the cooked pasta and the pasta water you saved in the pan. Mix everything together, then cook for another two to three minutes to let the flavors blend. If you want, you can add salt, pepper, and crushed red pepper flakes to taste. After taking it off the heat, sprinkle it with grated Parmesan cheese.
